FALL FLOUNDER RUN CONTINUES ALONG WITH LIMITS OF TROUT
Early in the week catching flounder and speckled trout were the order of the day. Lots of working sea gulls in west cove early for anglers fishing under a cork and over a light lead head with a pink Gulp. As the cold front came thru an unfriendly north wind continued for a couple of days leaving most of our system pretty muddy. Good limits of flounder and trout made it back to the cleaning shed when you could find clean water. Live bait along with Hackberry Hustlers and Berkley Gulp worked well along the channel. Fishing on the bottom brought some nice flounder to the net. There are still a lot of small undersized redfish in the marsh but there are also some nice keeper slot reds along with them. We still have almost 2 weeks of fishing before we begin our 44th year of duck hunting here in Cameron Parish so call toll free at 888.762.3391 and come get in on some of this action.

EMAIL YOUR PICTURES TO:
1 lb smoked sausage or andouille sliced in 1/2 inch thick slices
1 lb smoked tasso, chopped fine
6 chicken bouillon cubes
Salt and pepper to taste
1 cup chopped onion
1 cup chopped bell pepper
1 cup chopped celery
3 cloves garlic, minced
1/2 cup chopped green onion tops
1/4 cup chopped parsley
1 cup vegetable oil
1 cup all purpose flour
4 quarts water
Directions
Make roux with oil and flour, cook until copper penny color. Add onion, bell pepper, celery and garlic and cook until limp. Add chicken and cook a few minutes, stirring constantly. Add water and chicken bouillon cubes. Cook on moderate heat until chicken is almost tender. Add sausage or andouille and tasso. Let boil until all meats are tender. Add onion tops and parsley and cook about ten minutes. Adjust seasonings and serve over cooked rice in soup bowls
